Sales leverage covers the new labour cost at 8% comparable growth. Starbucks' long-run comparable growth has never been 8%.
The service model that fixed the coffeehouse is a cost that has to be paid every single day.
The Green Apron Service model went live across the full US company-operated portfolio in the fourth quarter of fiscal 2025, and Starbucks is now "focused on empowering coffeehouse leaders to take ownership of sustaining the model as our permanent way of working."1 The word doing the work there is permanent.
The price is visible. North America store operating expenses went from 51.4% of related revenue to 56.4%, and labour investments cost approximately 190 basis points of North America margin in the June 2026 quarter and around 240 across the first three quarters.2 That is not a one-time restructuring charge; it is the running cost of the standard.
The optimistic case is that volume absorbs it. In the June quarter, 340 basis points of sales leverage offset the labour and restructuring and produced a 30-basis-point margin expansion.3 At 8% comparable-sales growth that arithmetic works comfortably.
At 2% comparable-sales growth it does not. Sales leverage is a function of the growth rate, and Starbucks' long-run comparable-sales growth has not been 8%. The labour cost is not a function of anything.
So the honest question is what margin this company earns at a normal comparable-sales rate with the new service model in the base — and nobody, including Starbucks, has seen that year yet.
Watch store operating expenses as a percentage of company-operated revenue in a quarter where comparable sales grow low single digits. That is the number that tells you what Back to Starbucks actually cost.
